Ingredients for Insalata Nuova Cucina Recipe

  • Iceberg Lettuce 1 large

  • Fresh button mushrooms 4-5

  • Yellow capsicum 1 small

  • Red capsicum 1 small

  • Tomato 1 medium

  • French beans blanched 10-12

  • Stuffed olives 8

  • Fresh basil leaves for garnishing

  • Balsamic vinegar 2 tablespoons

  • Olive oil 3 tablespoons

  • Salt to taste

  • Black peppercorns crushed 5-6


Step 1

Dice all vegetables and olives and mix them together in a large bowl. For the dressing, mix together the balsamic vinegar, olive oil, salt and crushed peppercorns. Pour over the salad and toss thoroughly to mix. Garnish with fresh basil sprigs.
