You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Hollandaise Sauce Recipe

  • Egg yolks 3

  • Butter 100 grams

  • Lemon juice 1 tablespoon

  • Salt to taste

  • Black peppercorns , crushed to taste

  • Eggs , poached to serve

  • English muffins to serve

Method

Step 1

Melt butter in a non-stick pan. Pour into a strainer lined with muslin cloth and strain into a clean bowl.

Step 2

Heat sufficient water in a deep pan, keep a glass bowl over it. Break eggs and add only the yolks into the bowl and whisk continuously adding butter, little by little, till the mixture is thick. The sauce should form ribbons when the whisk is lifted.

Step 3

Remove the bowl from heat, add lemon juice and whisk well. Add salt and crushed peppercorns and whisk again.

Step 4

Transfer into a serving bowl and serve with poached eggs over English muffins.
