Ingredients list for Golden Chicken And White Wine Risotto
- 2 Chicken breasts sliced thinly
- 1 1/2 cup Arborio rice
- 1/2 cup White wine
- 2 tablespoons Butter
- 1 tablespoon Olive oil
- 8-10 cloves Garlic finely chopped
- a pinch Saffron (kesar)
- 4 1/2 cups Chicken stock
- to taste Salt
- 1 teaspoon Crushed black peppercorns
- 2 tablespoons Parmesan cheese grated
- for garnish Parsley
Method
- Heat butter in a non-stick pan, add the chicken and sauté till golden brown.
- Drain and set aside. Heat olive oil in the same pan.
- Add garlic and sauté for thirty seconds.
- Add onion and sauté till the onion is light brown.
- Add rice, saffron and sauté for two to three minutes.
- Add chicken stock, little by little, and cook till the rice is three-fourth done.
- Add wine and cook till the rice is completely cooked.
- Add salt, crushed peppercorns and one tablespoon Parmesan cheese and mix well.
- Add chicken pieces and mix well.
- Sprinkle the remaining Parmesan cheese and serve hot garnished with a parsley sprig.
