History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Fruit Mein Kulfi Recipe

  • Alphonso cut into cubes 1 Big

  • Milk 1 Big

  • Milk 5 cups

  • sugar 1/4 cup

  • Khoya/mawa grated 3/4 cup

  • Green cardamom powder 1/2 teaspoon

  • Almonds chopped 12-15

  • Pistachio powder 15-20

Method

Step 1

Bring milk to a boil in a deep non-stick pan and cook till reduced to one third its volume. Remove from heat and stir in sugar and khoya. Add green cardamom powder, almonds and pistachios and mix again.

Step 2

Fill the mixture into kulfi cones or earthen pots (kulhads) and cover them with lid. Keep the cones or kulhads in the deep freezer for four to six hours or till well set.

Step 3

Unmould and serve immediately with cut fruits.
