Ingredients for Fruit Cake Recipe

  • Raisins 1/2 cup

  • Refined Flour 1 1/2 cups

  • Currants 1/2 cup

  • Glazed cherries chopped 50 grams

  • Baking powder 1 1/2 teaspoons

  • Salt 1/4 teaspoon

  • Cinnamon powder 1 teaspoon

  • Butter 120 grams

  • Sugar Free 8 teaspoons

  • Orange zest 1 teaspoon

  • Orange juice 1/4 cup

  • Orange marmalade 1 tablespoon

  • Eggs whisked 2


Step 1

Preheat oven to 160ºC/325ºF/ Gas Mark 3. Grease an eight-inch round cake tin.

Step 2

Sift flour, baking powder, salt and cinnamon powder.

Step 3

In a pan add butter, Sugar Free, orange zest, orange juice and two third cup of water. Simmer it until the mixture is smooth.

Step 4

Stir in raisins and currants and continue to simmer for another five minutes. Cool.

Step 5

Add this to the sifted flour and mix. Mix in glazed cherries, orange marmalade and eggs.

Step 6

Pour this mixture into the greased tin and bake in the preheated oven for one and half hours.

Step 7

Insert a toothpick in the centre and if it comes out clean it indicates that the cake is baked.

Step 8

Cool and demould.
