Ingredients list for Fig and Bran cake
- ½ cup Figs Chopped
- ½ cup Bran
- 1½ cup Whole wheat flour (atta)
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
- ? teaspoon Nutmeg powder
- ¼ teaspoon Cinnamon powder
- 2 Eggs
- ¾ cup brown sugar/jaggery
- ¼ cup + to Rice bran oil
- ½ cup Orange juice
Method
- Preheat oven to 180° C.
- Sieve wheat flour, bran, baking powder, baking soda, nutmeg powder and cinnamon powder into a bowl.
- Break eggs into another bowl and beat with a hand blender. Add brown sugar and beat till frothy.
- Lightly grease a non-stick cake tin, dust with dry flour and shake off excess.
- Add rice bran oil, orange juice, figs and beaten eggs to the flour mixture and fold in well.
- Pour the batter into the cake tin and pat the tin on the table so that batter settles well.
- Place the tin in the preheated oven and bake for about 25 minutes. Check after 20 minutes by inserting a skewer into the cake. If it comes out clean the cake is done. If the skewer does not come out clean, bake for some more time.
- Take the tin out of the oven and let it cool. Remove the cake from the tin, slice and serve with cups of hot tea.
