Ingredients list for Eve’S Pudding With Mango

  • 500 grams Ripe Mangoes peeled and sliced
  • 3/4 cup Refined Flour
  • 1/4 cup Unsalted butter
  • 1/4 cup Castor sugar (caster sugar)
  • 1 Egg
  • 1/4 teaspoon Vanilla essence
  • 3/4 teaspoon Baking powder
  • 1/4 cup Sugar

Method

  1. Preheat oven to 160°C.
  2. Cream butter with castor sugar until pale and soft. Beat in the egg and mix. Add vanilla essence. Sieve refined flour and baking powder onto this mixture.
  3. Mix with a palette knife in a cut and fold style. Take a pudding mould. Arrange the mango slices at the base. Sprinkle sugar over them. Put the pudding batter over and level the top.
  4. Bake in the preheated oven at 160°C for about one hour.
