You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Egg Benedict Recipe

  • Eggs 4

  • Spring onions with greens 2

  • Salt to taste

  • Black pepper powder 1 teaspoon

  • Brown bread rolls 2

  • Vinegar 1 tablespoon

  • Olive oil 2 tablespoons

  • Grated cheese 4 tablespoons

  • Crushed black peppercorns as required


Step 1

Heat 5 cups water in a deep non stick pan. Preheat oven to 180°C.

Step 2

Slice spring onion bulbs and cut half the greens into thick slices.

Step 3

Place spring onions in a baking tray, add salt, pepper powder and 1 tbsp olive oil and keep it in the preheated oven.

Step 4

Cut the brown bread rolls horizontally. Break an egg in a small bowl.

Step 5

Add vinegar to the water in the pan and slowly put an egg in the pan.

Step 6

Roll the egg white over the yolk to make a ball. Similarly poach the remaining eggs.

Step 7

Brush the bread rolls with 1 tbsp olive oil and place them over the spring onions.

Step 8

Place each poached egg over one half of a roll, sprinkle cheese and crushed peppercorns and place it back in the oven.

Step 9

Bake till the cheese melts and serve hot.
