Ingredients list for Creamy Red Rice Risotto
- 1½ cups Red rice
 - 4 tablespoons Butter
 - 1 medium Onion sliced
 - 2-3 Garlic cloves finely chopped
 - 1 tablespoon Mixed herbs fresh, chopped
 - 6 cups Vegetable stock
 - to taste Salt
 - 10-12 Black peppercorns crushed
 - ½ cup Frozen green peas
 - ½ cup Cream
 - 1 tablespoon Mascarpone cheese
 - for garnishing Parmesan cheese shavings
 - for garnishing Fresh parsley sprigs
 
Method
- Heat butter in a non-stick pan. Add onion, garlic and mixed herbs, mix well and sauté till onion turns golden brown.
 - Add rice and sauté for 2-3 minutes. Add 1 cup vegetable stock, salt and crushed peppercorns and simmer till the stock is absorbed.
 - Repeat the same with the remaining stock, adding 1 cup at a time. Add peas, mix and cook for 1 minute.
 - Add mascarpone cheese and mix gently.
 - Sprinkle parmesan cheese shavings, garnish with parsley sprigs and serve hot.
