Ingredients
- 1 cup minced lamb
- 1 egg white
- 1 medium carrot, chopped
- 1 small stick celery
- 2 bay leaves
- 4-5 black peppercorns
- 1 sprigs fresh thyme
- Salt to taste
- 1 medium onion, chopped
- 1 egg shell
- 1 litre lamb stock
Method
- Mix together the minced lamb, onion, carrots, celery, bay leaves, black peppercorns, thyme, salt, egg white and egg shell in a deep pan.
- Add the lamb stock and simmer, stirring continuously, till froth rises to the surface.
- Place the saucepan on a tawa and simmer for atleast two hours, taking care not let the consommé come to a boil. Strain the consommé through a muslin cloth and serve piping hot.
