Coleslaw Tacos

Ingredients 

  • 12 taco shells
  • 50 grams of cabbage cut into small cubes
  • ¼ medium cabbage, shredded
  • 1 medium carrot grated
  • 1 small green capsicum cut into thin strips
  • 1 small yellow capsicum cut into thin strips
  • 1 small red capsicum cut into thin strips
  • Salt to taste
  • Black pepper powder to taste
  • ¼ cup eggless mayonnaise
  • ¼ cup cream cheese
  • 2 tablespoons tomato ketchup
  • 4 spring onions cut into thin strips

Method

  1. Mix the cabbage, carrot, green capsicum, yellow capsicum, red capsicum, cottage cheese, salt and pepper powder in a bowl.
  2. Mix the mayonnaise, cream cheese and tomato ketchup in another bowl.
  3. Place a tablespoon full of the vegetable mixture into each taco shell, drizzle a little of the mayonnaise mixture, garnish with the spring onions and serve immediately.
