Ingredients
- 12 taco shells
- 50 grams of cabbage cut into small cubes
- ¼ medium cabbage, shredded
- 1 medium carrot grated
- 1 small green capsicum cut into thin strips
- 1 small yellow capsicum cut into thin strips
- 1 small red capsicum cut into thin strips
- Salt to taste
- Black pepper powder to taste
- ¼ cup eggless mayonnaise
- ¼ cup cream cheese
- 2 tablespoons tomato ketchup
- 4 spring onions cut into thin strips
Method
- Mix the cabbage, carrot, green capsicum, yellow capsicum, red capsicum, cottage cheese, salt and pepper powder in a bowl.
- Mix the mayonnaise, cream cheese and tomato ketchup in another bowl.
- Place a tablespoon full of the vegetable mixture into each taco shell, drizzle a little of the mayonnaise mixture, garnish with the spring onions and serve immediately.
