By Sanjeev Kapoor 17 Dec 2015 in Recipes Course New Update Main Ingredients Paneer, Tomatoes Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Tangy Level of Cooking Moderate Others Veg Ingredients list for Cocktail Paneer Sandwich 400 grams Paneer 2 inch roundles 4 tablespoons Tomatoes 2 tablespoons Vinegar 2 tablespoons Honey 1/4 teaspoon Dry oregano to taste Salt Butter for basting melted 2 medium Tomatoes quartered 1 large Onion quartered 1 large Green capsicum quartered 3-4 cloves Garlic 1 Jalapeno chopped 1 teaspoon Red chilli flakes 1 tablespoon Lemon juice to taste Salt a few Fresh coriander leaves chopped Method Combine live oil, vinegar, honey, dried oregano and salt in a small bowl, mix well and apply this mixture on both sides of paneer roundels. Keep aside for ten to fifteen minutes. Roast tomatoes, onion, green capsicum and garlic on a pan till lightly charred. Remove from heat, when cool grind the same coarsely. Transfer into a bowl, add jalapeno pepper, chilli flakes, lemon juice, salt and coriander leaves, mix well and keep aside. Place a paneer roundel on a flat working surface, place a spoonful of salsa over the paneer and spread gently and then cover with another roundel of paneer to make a sandwich. Similarly prepare the rest of the sandwiches using the remaining paneer and salsa. Preheat a grill. Place prepared sandwiches on a rack, baste with butter and grill till golden. Turn over and continue to grill till both sides are golden.
