Ingredients list for Chocolate Brownie Cookies

  • 1/4 cup Dark chocolate chips
  • 1/4 cup Cocoa powder
  • 1 cup Refined flour
  • 1 tablespoon Butter
  • 2 Eggs
  • 1 teaspoon Vanilla essence
  • 1 cup Castor sugar (caster sugar)
  • 2-3 tablespoons Cornflour/ corn starch
  • 1 teaspoon Baking powder
  • to taste Salt
  • 2 tablespoons Walnuts chopped
  • 1 cup Mixed chocolate chips

Method

  1. Mix together butter and chocolate chips in a bowl and melt in the microwave for 30 seconds. Remove from microwave and mix till smooth.
  2. Break eggs in a mixing bowl and beat with an electric beater till fluffy. Add vanilla essence and whisk. Add castor sugar and cream till light. Add melted chocolate and beat well.
  3. Sift together refined flour, cornflour, baking powder, cocoa powder and salt into the mixture and fold in till well incorporated.
  4. Add walnuts and mixed chocolate chips and fold in again. Refrigerate for 30 minutes.
  5. Preheat oven to 180º C. Line a baking tray with a parchment paper.
  6. Divide the mixture into equal portions and place them on the lined tray keeping a little distance between each. Put the tray in the preheated oven and bake for 10-15 minutes.
  7. Remove from oven and cool. Serve with milk.
