Ingredients list for Chilli Pineapple Grilled Chicken

  • 2 Boneless chicken breasts
  • 1 teaspoon Fresh red chillies , finely chopped
  • 1/4 cup Pineapple juice
  • to taste Salt
  • to taste Black pepper powder
  • 1 tablespoon Garlic , chopped
  • 1 tablespoon Butter
  • 4-5 Broccoli florets
  • 6-8 Red and yellow capsicum triangles

Method

  1. Preheat the oven to 180° C.
  2. Place chicken breasts on a plate, sprinkle salt and pepper powder over them and rub in well. Add red chillies and garlic and rub in again. Add pineapple juice, rub in well and set aside to marinate for 5 minutes.
  3. Heat butter in a non-stick grill pan. Place the grilled chicken breasts in it, reserving the marinade, and sear on both sides till grill marks appear. Place them on a baking tray.
  4. Place the tray in the preheated oven and bake for 5-10 minutes. Remove from the oven.
  5. Heat the reserved marinade in the same non-stick grill pan. Add the mixed vegetables and cook till golden brown.
  6. Place the chicken breasts on a serving plate and serve hot with the grilled vegetables.
