Ingredients list for Chilled Cucumber & Buttermilk Soup

  • 2 medium Cucumbers chopped
  • Buttermilk
  • 3 cups Buttermilk
  • 1/2 inch piece Ginger chopped
  • 1-2 Green chillies chopped
  • to taste Salt
  • 1/2 teaspoon White pepper powder
  • 6-8 leaves Fresh mint leaves
  • to garnish Fresh mint leaves
  • 2 teaspoons Lemon juice

Method

  1. Take chopped cucumber in a blender.
  2. Add ginger, green chilli, salt, white pepper powder and mint leaves and blend till smooth. Add buttermilk, lemon juice and blend again. Transfer into a serving bowl and chill.
  3. Garnish with mint leaves and serve.
