Chicken on Lemongrass Sticks

Ingredients list for Chicken on Lemongrass Sticks

  • 400 grams Chicken mince
  • 8 four-inc Lemongrass sticks long
  • 5-6 Garlic cloves finely chopped
  • 1 Red chilli chopped
  • 6-8 Fresh coriander stems finely chopped
  • to taste Salt
  • to taste Crushed black peppercorns
  • for shallow frying Oil

Method

  1. Put chicken mince, garlic, fresh red chilli, coriander stems, salt and crushed peppercorns in a bowl and mix well.
  2. Divide the mixture into eight equal portions. Dampen your palms and press each portion around a lemongrass stick.
  3. Heat some oil in a non-stick grill pan. Place the prepared sticks and shallow-fry on medium heat, rotating the sticks, till evenly golden all around and the chicken is fully cooked.
  4. Serve hot with sweet chilli sauce.
