Ingredients list for Chicken and Roasted Pepper Ragout

  • 8-10 Chicken drumsticks
  • 2 medium Red bell pepper roasted and cut into cubes
  • to taste Salt
  • to taste Crushed black peppercorns
  • 2 tablespoons Paprika smoked
  • Lemon zest of ½ lemon
  • as required Olive oil 1 tablespoon +
  • 3 medium Onions chopped
  • 1 tablespoon Garlic chopped
  • 1 tablespoon Refined flour (maida)
  • 1½ cups Chicken stock
  • ¼ cup Fresh cream
  • 2 teaspoons Fresh parsley chopped

Method

  1. Take the chicken drumsticks in a bowl. Add salt, crushed peppercorns, one tablespoon paprika, one teaspoon cumin powder and lemon zest, mix well and set aside to marinate.
  2. Heat olive oil in a non-stick pan. Add onions and sauté till translucent. Add garlic, mix and sauté till onions turn golden.
  3. Heat some olive oil in another non-stick pan. Add the marinated chicken drumsticks and sear till evenly golden from both sides.
  4. Add flour to the onions, mix and sauté for a minute. Add the chicken stock, stir and bring to a boil.
  5. Add the remaining paprika, remaining cumin powder, salt and crushed peppercorns and mix well. Add the seared chicken drumsticks, mix well and cook till the chicken is fully done.
  6. Add the peppers and mix. Add the cream and parsley and mix well.
  7. Serve hot.
