Ingredients for Cheese Sauce Recipe

  • Cheddar cheese slab 75 grams

  • Processed cheese , grated 1/2 cup

  • Refined flour (maida) 2-3 tablespoons

  • Milk 2 cups

  • Bay leaf 1

  • Onion layer 1

  • Clove 1

  • Butter 2-3 tablespoons

  • Salt to taste

  • Black peppercorns , crushed to taste

  • Black and green olive slices to garnish

  • Nachos to serve

Method

Step 1

To prepare cheese sauce, heat milk in a non-stick pan. Add bay leaf and 2 layers of quartered onion with a clove and bring the mixture to a boil. Remove onion and bay leaf from milk and set aside.

Step 2

Heat butter in another non-stick pan. Add refined flour, mix well and sauté for 2-3 minutes, making sure that the flour doesn’t change colour. Add half the flavoured milk and mix well to make a thick paste. Add remaining milk and mix further to make sure there are no lumps.

Step 3

Grate the slab of cheddar cheese into the pan and whisk well till the cheese melts. Add grated processed cheese and mix well.

Step 4

Add salt and crushed peppercorns and mix. Remove from heat.

Step 5

Transfer into a serving bowl, garnish with olive slices and serve with nachos.
