By Sanjeev Kapoor 26 Oct 2021 in Recipes Course New Update Main Ingredients Cheddar cheese slab, Processed cheese Cuisine Fusion Course Gravies, Sauces and Stocks Prep Time 0-5 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Cheese Sauce 75 grams Cheddar cheese slab 1/2 cup Processed cheese , grated 2-3 tablespoons Refined flour (maida) 2 cups Milk 1 Bay leaf 1 Onion layer 1 Clove 2-3 tablespoons Butter to taste Salt to taste Black peppercorns , crushed to garnish Black and green olive slices to serve Nachos Method To prepare cheese sauce, heat milk in a non-stick pan. Add bay leaf and 2 layers of quartered onion with a clove and bring the mixture to a boil. Remove onion and bay leaf from milk and set aside. Heat butter in another non-stick pan. Add refined flour, mix well and sauté for 2-3 minutes, making sure that the flour doesn’t change colour. Add half the flavoured milk and mix well to make a thick paste. Add remaining milk and mix further to make sure there are no lumps. Grate the slab of cheddar cheese into the pan and whisk well till the cheese melts. Add grated processed cheese and mix well. Add salt and crushed peppercorns and mix. Remove from heat.
