Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Cheese Flan Recipe

  • Cream Cheese softened 200 grams

  • Sugar 1 cup

  • Milk 2 1/2 cups

  • Cinnamon stick 2 inches

  • Condensed milk 1/2 cup

  • Eggs 5

  • Vanilla essence 1 teaspoon

  • Salt 1/8 teaspoon

Method

Step 1

To make caramel, heat sugar and ¼ cup water in a non-stick pan, on medium heat, stirring continuously till sugar dissolves.

Step 2

Dip a silicon brush in cold water and rub on the sides of the pan occasionally so that the sugar browns evenly.

Step 3

To make flan, heat milk in a deep non-stick pan, add cinnamon and cook till milk comes to a boil. Switch off heat, discard cinnamon and cool down to room temperature.

Step 4

Preheat oven to 180° C.

Step 5

Take cream cheese in a bowl and whip it till soft and smooth. Add condensed milk and mix well.

Step 6

Break 2 eggs and add and beat with an electric beater. Add vanilla essence and a pinch of salt and beat again.

Step 7

Put caramelized sugar equally into 4 ramekin moulds and set aside to cool down to room temperature.

Step 8

Break remaining eggs and add and continue to beat till smooth. Add milk mixture and beat again.

Step 9

Once the caramelized sugar in the ramekin moulds is set, put the milk-cream cheese mixture in them equally. Place the moulds in a baking tray, fill it with sufficient water, cover with an aluminum foil, place it in preheated oven and bake for 50-55 minutes.

Step 10

Remove the moulds from the water bath and rest for 15 minutes. Cool to room temperature, invert the flans on a serving platter and serve warm.
