If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Carrot and Orange Cake with Ice cream Recipe

  • Carrots grated 2 cups

  • Orange Segments 1 cup + for garnishing

  • Orange marmalade 2 tablespoons

  • Orange 1

  • Eggs 3

  • Castor sugar 2 cups

  • Refined flour (maida) 2 1/2 cup + for dusting

  • Salt 1 teaspoon

  • Soda bicarbonate 2 teaspoons

  • Oil 1 1/2 cups + for greasing

  • Fresh scraped coconut 1 cup

  • Pralines cream ice cream scoops for serving

  • Fresh mint leaves for garnishing

Method

Step 1

Preheat oven to 180º C. Grease and dust cake tin with oil and flour.

Step 2

Break eggs into a bowl, add sugar and beat with electric beater till smooth.

Step 3

Sieve refined flour, salt and soda bicarbonate into another bowl. Add oil, carrot and coconut and mix well. Add egg-sugar mixture and orange marmalade and mix well. Add the orange segments and mix well. Grate rind of orange into the bowl and mix well.

Step 4

Pour the batter into the cake tin. Place tin in the preheated oven and bake for 45-50 minutes.

Step 5

Remove the cake from tin and cool down to room temperature. Cut into wedges and arrange on one side of 4 serving plates.

Step 6

Place scoops of Praline cream ice cream on the other side of the plates, garnish with some orange segments and mint leaves and serve immediately.
