Caramelised Pumpkin Chicken Curry An unusual curry – chicken cooked with roasted pumpkin puree and masalas. This recipe is from FoodFood TV channel By Sanjeev Kapoor 11 Nov 2019 in Recipes Course New Update Main Ingredients Red pumpkin, Boneless chicken breasts Cuisine Indian Course Main Course Chicken Prep Time 0-5 minutes Cook time 21-25 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Non Veg Ingredients list for Caramelised Pumpkin Chicken Curry 200 grams Red pumpkin peeled and sliced thinly 4 Boneless chicken breasts 4 tablespoons Oil to taste Salt 1 1/2 tablespoons Ginger-garlic paste 1 teaspoon Roasted cumin powder 1/2 cup Tomato puree 1/2 Green chilli 1/2 teaspoon Garam masala powder for garnish A fresh mint sprig Method Heat 2 tbsps oil in a non-stick pan, add pumpkin slices and little salt, mix, cover and cook on high heat till pumpkin is cooked and caramelises. Heat 2 tbsps oil in another non-stick pan. Cut chicken into medium sized pieces and put in this pan and sauté for 2 minutes. Add ginger-garlic paste and mix. Cover and cook for 2 minutes. Add cumin powder to the chicken and mix. Cover and cook. When the pumpkin gets slightly burnt, put it into a mixer jar. Add tomato puree and grind. Add green chilli and grind again. Add ½ cup water to the chicken and mix. Add the pumpkin paste and mix. Add salt and garam masala powder and mix. Cover and cook on low heat for 5-7 minutes or till chicken is done. Transfer into a serving bowl and serve garnished with fresh mint sprig.
