Ingredients list for Caprese Chicken Roulade

  • 4 Boneless chicken breasts cut into butterfly shape
  • as required Mozzarella cheese roundels
  • as required Tomatoes sun dried
  • for greasing Oil
  • to taste Crushed black peppercorns
  • to taste Salt
  • to sprinkle Balsamic vinegar

Method

  1. Preheat oven to 180º C. Grease a baking tray with some oil.
  2. Place each chicken butterfly on worktop. Sprinkle some crushed peppercorns and salt over them.
  3. Place mozzarella cheese roundels and sun dried tomatoes alternatively on top on the chicken. Drizzle some balsamic vinegar on top and roll it tightly. Place them on the greased baking tray.
  4. Place the baking tray in preheated oven and bake for 10-15 minutes.
  5. Serve hot.
