Ingredients list for Blueberry Oatmeal Cake

  • 200 grams + to top Fresh blueberries
  • 1/2 cup + to sprinkle Rolled oats
  • 3/4 cup + for dusting Refined flour (maida)
  • 120 grams + for greasing Butter
  • 3/4 cup Castor sugar (caster sugar)
  • 1 teaspoon Vanilla essence
  • 3 Eggs
  • 1 teaspoon Baking powder
  • 1 tablespoon Milk
  • 2 tablespoons Mixed seeds (pumpkin seeds, sunflower seeds, melon seeds)

Method

  1. Preheat oven to 180° C. Grease a loaf tin with some butter and dust with some flour.
  2. Take butter in a mixing bowl, add castor sugar and beat with an electric beater till light and fluffy.
  3. Add vanilla essence and beat again. Add eggs, one at a time, and beat after each addition.
  4. Sieve together flour and baking powder into the mixture. Add oats and blueberries and fold in well. Add milk and mix well.
  5. Transfer the batter into the prepared tin and tap lightly. Sprinkle some oats, some blueberries and some mixed seeds.
  6. Keep the tin in the preheated oven and bake for 20-25 minutes. Remove the tin from the oven, cool and demould.
  7. Slice, arrange them on a serving platter and serve.
