Ingredients for Blinis Recipe

  • Milk lukewarm 55 millilitres

  • Refined flour (maida) 8 grams

  • Buck wheat flour 32 grams

  • Fresh yeast 1 teaspoon

  • Sugar ½ teaspoon

  • Eggs 2

  • Salt to taste

  • Sour cream as required

  • Quail eggs hardboiled and cut into roundels 3-4

  • Fresh parsley as required

  • Crushed black peppercorns to taste


Step 1

Take ½ of milk in a mixing bowl. Add yeast and sugar, mix and set aside to activate.

Step 2

Separate egg whites and yolks and put into two different bowls.

Step 3

Sieve together buck wheat flour, refined flour and salt into the activated yeast. Add remaining milk and egg yolks and mix well. Set aside to ferment for 10-15 minutes.

Step 4

Beat the egg whites using an electric beater till soft peaks appear. Transfer into another mixing bowl.

Step 5

Add ½ fermented mixture and fold in. Add remaining fermented mixture and fold in well.

Step 6

Heat a non-stick pan. Put a spoonful of the mixture and cook, turning sides, for 1-2 minutes on each side or till light golden on both sides.

Step 7

Place the blinis upside down on a serving platter. Put some sour cream, place quail egg roundels and a parsley leaf on top.

Step 8

Sprinkle crushed peppercorns and serve immediately.
