Ingredients list for Bibbya Upkari
- 400 grams Cashewnuts
- 1 tablespoon Oil
- 1/2 teaspoon Mustard seeds
- 10 Curry leaves
- 2-3 Dried red chillies broken
- to taste Salt
- 1 teaspoon Jaggery (gur) grated
- 1/2 cup Scraped coconut
Method
- Soak the cashewnuts in three cups of hot water for fifteen minutes. Peel them. Heat the oil in a non stick pan and add mustard seeds. When they splutter, add the curry leaves and broken red chillies.
- Add the peeled cashewnuts, salt and jaggery. Stir, add half a cup of water, cover and cook till the nuts are tender and dry. Garnish with coconut and serve hot.
