Ingredients list for Bibbya Upkari

  • 400 grams Cashewnuts
  • 1 tablespoon Oil
  • 1/2 teaspoon Mustard seeds
  • 10 Curry leaves
  • 2-3 Dried red chillies broken
  • to taste Salt
  • 1 teaspoon Jaggery (gur) grated
  • 1/2 cup Scraped coconut

Method

  1. Soak the cashewnuts in three cups of hot water for fifteen minutes. Peel them. Heat the oil in a non stick pan and add mustard seeds. When they splutter, add the curry leaves and broken red chillies.
  2. Add the peeled cashewnuts, salt and jaggery. Stir, add half a cup of water, cover and cook till the nuts are tender and dry. Garnish with coconut and serve hot.
