Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Beetroot & Walnut Raita - SK Khazana Recipe

  • Beetroot puree 2 tablespoons

  • California walnuts 16-20

  • Yogurt 1 cup

  • Red chili powder 1 teaspoon

  • Roasted cumin powder 1 teaspoon

  • Salt to taste

  • Fresh mint leaves 6-8

  • Fresh mint sprig to garnish


Step 1

Heat sufficient water in a non-stick pan, add walnuts and blanch them. Remove from heat, drain, cool and chop roughly.

Step 2

Mix together yogurt, beetroot puree, walnuts, chilli powder, cumin powder and salt in a bowl.

Step 3

Add mint leaves, mix well and refrigerate to chill.

Step 4

Transfer into a serving bowl, garnish with mint sprig and serve chilled.
