Ingredients list for Basic Dark Sponge
- 75 grams Cocoa powder
 - 300 grams Refined flour (maida)
 - 6 grams Baking soda
 - 7 grams Baking powder
 - 150 grams Butter
 - 375 grams Castor sugar (caster sugar)
 - 5 Eggs
 - 330 millilitres Milk
 - A few drops Vanilla Essence
 
Method
- Preheat oven at 180°C. Grease an aluminium cake tin and dust with little flour.
 - Sift together refined flour, cocoa powder, baking soda and baking powder in a bowl. Mix well.
 - Combine butter and sugar in another bowl.
 - Break eggs in another bowl and set aside.
 - Cream butter and sugar till smooth. Add eggs, one-by-one and cream till well blended.
 - Fold in the flour mixture, little by little and beat well. Add milk, vanilla essence and beat well till well mixed.
 - Pour the batter in prepared tin, filling 3/4th, tap the tin, place in preheated oven and bake for 40-45 minutes.
 - Remove from heat and cool. Demould, cut into wedges and serve.
