Ingredients
- 1 large brinjal
- 1 tablespoon oil
- 2 medium onions, finely chopped
- 2 medium tomatoes, finely chopped
- 1 teaspoon red chilli powder
- Salt to taste
- 1 tablespoon chopped fresh coriander leaves
Method
- Brush some oil over the brinjal. Place it on direct flame and roast on low heat from all sides till the skin gets charred. Transfer onto a plate and let cool.
- Heat oil in a non-stick pan. Add onions and sauté till golden. Add tomatoes, mix and cook for 3-4 minutes or till oil separates.
- Peel and mash the brinjal.
- Add chilli powder and salt to the pan and mix well. Add mashed brinjal, mix and cook for 3-4 minutes. Add coriander leaves and mix well.
- Serve hot garnished with crushed peppercorns and a fresh coriander sprig.
