Add onion and garlic and sauté until onions are tender. Add rice and chicken stock and bring to a boil. Add chicken mince, salt and crushed peppercorns and stir. Reduce heat, cover and simmer for fifteen minutes or until rice is well cooked and all the liquid is absorbed.
