How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Cook time : 16-20 minutes

Ingredients for Ari Payasam Recipe

  • Kolam rice 1 cup

  • Jaggery (gur) grated 1 cup

  • Desi ghee 1 tablespoon

  • Raisin 1 tablespoon

  • Cashewnuts 1 tablespoon

  • Elaichi bananas 4

  • Fresh coconut grated 3/4 cup

  • Green cardamom powder 1 teaspoon

  • Coconut milk (optional) 1/2 cup

Method

Step 1

Heat sufficient water in a non-stick pan. Add rice and let it cook.

Step 2

Heat ghee in another non-stick pan. Add raisin and saute. Add cashewnuts and saute till lightly browned. Transfer the dry fruits into a bowl and set aside.

Step 3

Add jaggery to the rice, mix well and cook till the jaggery melts.

Step 4

Add coconut, mix well and cook further. Add cardamom powder, mix well and cook on medium heat.

Step 5

Peel bananas, cut into halves horizontally, slice finely and add to the rice. Mix well making sure that the bananas get mashed.

Step 6

Add coconut milk (if using), mix well and cook for 3-5 minutes.

Step 7

Switch off heat, add half the sautéed dry fruits and mix well.

Step 8

Serve hot or chilled garnished with remaining sautéed dry fruits.
