Ingredients

  • 8 blanched large broccoli florets
  • 2 tablespoons yellow Thai curry paste
  • ½ cup hung yogurt
  • Salt to taste
  • 1 kaffir lime
  • Salad for serving

Method

  1. Take hung yogurt in a mixing bowl, add yellow Thai curry paste and salt. Zest kaffir lime directly into the bowl and mix well.
  2. Add blanched broccoli florets and mix well. Set aside to marinate for 10-15 minutes.
  3. Preheat oven to 180˚ C.
  4. Transfer the broccoli pieces on a greased baking tray, keep the tray in the preheated oven and bake for 15-20 minutes.
  5. Bring the tray out of the oven, arrange the broccoli on a serving plate and serve hot with salad.
