Ingredients
- 1½ cups ProV Select Whole Natural Cashewnuts
- 1¼ cups castor sugar
- ¼ teaspoon almond essence
- Edible rose pink gel colour as required
- Edible lemon-yellow gel colour as required
- Edible leaf green gel colour as required
Method
- Take ProV Select Whole Natural Cashewnuts in a bowl add sufficient water and let them soak for 20-30 minutes.
- Drain the soaked cashewnuts and transfer them into a blender jar and grind coarsely. Add ⅛ cup water and grind to fine paste.
- Heat a non-stick pan, add the ground paste and castor sugar and mix well. Add almond essence, mix well and cook on low heat till the mixture is thick and starts to leave the sides of the pan. The mixture should form soft ball when put into ice cold water. It should not stick to your fingers.
- Allow the mixture to cool completely and divide into 3 equal portions and put them in 3 different bowls.
- Add rose pink colour to 1st portion, lemon yellow to 2nd and green to 3rd portion and mix well.
- Make small portions of each mixture. Transfer mixture of 2 different colours into small chocolate moulds and press lightly.
- Demould, arrange them on a serving platter and serve.
