Luchi

Luchis are to East India, what puris are to the West, North and Central India… Just that maida replaces wheat here. This is Sanjeev Kapoor exclusive recipe.

Method    

  1. Take refined flour in a bowl, add salt and oil and mix well. Add ¾ cup water, little at a time, and knead to stiff dough. Cover with a moist muslin cloth and set aside for 30 minutes.
  2. Heat sufficient oil in a kadai.
  3. Divide the dough into 16 equal portions and roll into balls. Flatten each ball, apply some oil on the surface and roll out into a semi thick luchi or puri.
  4. Slide each luchi into hot oil and deep-fry, turning sides till puffed and light golden on both sides. Drain on absorbent paper.
  5. Arrange them on a serving platter and serve with a curry of your choice.
