Ingredients
- 2 cups refined flour (maida)
- Salt to taste
- 1 tablespoon oil+ for deep frying
Method
- Take refined flour in a bowl, add salt and oil and mix well. Add ¾ cup water, little at a time, and knead to stiff dough. Cover with a moist muslin cloth and set aside for 30 minutes.
- Heat sufficient oil in a kadai.
- Divide the dough into 16 equal portions and roll into balls. Flatten each ball, apply some oil on the surface and roll out into a semi thick luchi or puri.
- Slide each luchi into hot oil and deep-fry, turning sides till puffed and light golden on both sides. Drain on absorbent paper.
- Arrange them on a serving platter and serve with a curry of your choice.
