Ingredients
- 2 kiwis
- 1-2 lemongrass stalks
- ½ cup sugar
- 2-3 tea bags
- 4 tablespoons lemon juice
- Ice cubes as required
Method
- To make sugar syrup, roughly chop lemongrass stalks and transfer into a deep pan. Add sugar and 1½ cups water and bring it to a boil. Continue to cook for 6-8 minutes. Strain into a jar and allow to cool completely.
- Pour 2 cups hot water into another jar. Add tea bags and let the flavour infuse for 3-4 minutes. Remove the tea bags and set aside to cool.
- For each portion, peel ½ a kiwi and cut it into small pieces, transfer into a shaker and muddle well. Add 30 millilitre of lemongrass syrup, 1 tablespoon lemon juice and 4-5 ice cubes and shake well.
- Put a few ice cubes into a tall serving glass. Strain the kiwi mixture into it and top it up with ½ cup of tea decoction. Garnish with lemongrass stalk and serve immediately.
