Ingredients
- 1½ cups grated mozzarella cheese
- 5 dried red chillies, stemmed and soaked
- 1 inch ginger, chopped
- 2 tablespoons oil
- 2 spring onion bulbs, chopped
- Salt to taste
- Crushed black peppercorns to taste
- 3 cups cooked rice
- 2 tablespoons chopped spring onion greens + for garnish
- 1 teaspoon red chilli flakes
Method
- Transfer mozzarella cheese in a blender jar. Drain dried red chillies and add along with ginger. Add ¾ cup water and grind to a fine paste.
- Heat oil in a nonstick pan. Add spring onion bulbs and sauté for a minute. Add the prepared paste and sauté for 3-4 minutes.
- Add salt, crushed black peppercorns and mix well.
- Add rice and mix well. Cook for 2-3 minutes.
- Add spring onion greens, red chilli flakes and mix well.
- Serve hot garnished with spring onion greens.
