Kharzi

Check out this cheesy and easy Rice recipe kharzi from Arunachal Pradesh. Mozzarella cheese, chillies and ginger are blended to make a fine paste. Then cooked rice is tossed in this paste along with spring onion.

Ingredients

  • 1½ cups grated mozzarella cheese
  • 5 dried red chillies, stemmed and soaked
  • 1 inch ginger, chopped
  • 2 tablespoons oil
  • 2 spring onion bulbs, chopped
  • Salt to taste
  • Crushed black peppercorns to taste
  • 3 cups cooked rice
  • 2 tablespoons chopped spring onion greens + for garnish
  • 1 teaspoon red chilli flakes

Method

  1. Transfer mozzarella cheese in a blender jar. Drain dried red chillies and add along with ginger. Add ¾ cup water and grind to a fine paste.
  2. Heat oil in a nonstick pan. Add spring onion bulbs and sauté for a minute. Add the prepared paste and sauté for 3-4 minutes.
  3. Add salt, crushed black peppercorns and mix well.
  4. Add rice and mix well. Cook for 2-3 minutes.
  5. Add spring onion greens, red chilli flakes and mix well.
  6. Serve hot garnished with spring onion greens.
