Ingredients
- 4 plums
- 4-5 puff pastry squares
- ¼ cup sugar
- 1 teaspoon lemon juice
- A pinch of cinnamon powder
- 3-4 cake slices
- Milk for brushing
- Apricot jam for brushing
- Pistachio powder to sprinkle
Method
- Deseed the plums. Chop 2 and slice the remaining.
- Heat a non-stick pan, add chopped plums, sugar and ¼ cup water and cook for 6-8 minutes or till the plums soften and the mixture thickens.
- Add lemon juice and cinnamon powder and mix well. Transfer into a bowl and allow to cool.
- Preheat the oven to 180º C.
- Crumble the cake slices directly in the bowl of plum mixture and mix well.
- Place the puff pastry sheets on the worktop and roll them slightly. Place a generous portion of the plum stuffing in the centre. Arrange the plum slices on top.
- Brush milk on the edges, fold the edges slightly so that it looks like open pocket.
- Arrange these pockets on a greased baking tray and brush some milk over the pockets.
- Place the tray in the preheated oven and bake for 10-15 minutes.
- Take the tray out of the oven, brush apricot jam on top and sprinkle pistachio powder.
- Arrange these pastries on a serving platter and serve.
