Ingredients
- 3 cups refined flour (maida) + for dusting
- ½ cup chilled butter, cut into cubes
- 1 tablespoon active dry yeast
- 2 teaspoons salt
- ½ cup maize flour (makkai ka atta)
Method
- Sift refined flour into a large bowl, add butter and rub it into the flour with your fingertips till they resemble breadcrumbs.
- Take yeast in a small bowl, add 2 tablespoons warm water and mix till well combined. Set aside to activate.
- Add salt and maize flour to the refined flour in the large bowl.
- Once the yeast mixture is foamy, add it to the flour mixture along with 1 cup water, mix well and knead into a soft dough.
- Dust the worktop with some refined flour and continue to knead for 5 minutes. Transfer the dough into large bowl, cover with a damp muslin cloth and set aside to prove for 1 hour.
- Knock back the dough. Dust the worktop with the some flour and place the dough on it and knead it for 1-2 minutes.
- Use as required.
