Ingredients
- 8 tablespoons chopped tender coconut flesh
- Tender coconut water as required
- 120 millilitre lemon juice
- 240 millilitre simple syrup
- 4 pinches of black salt
- Ice cubes as required
- Fresh rosemary sprigs for garnish
Method
- Pour the lemon juice in a shaker, add simple syrup, black salt and some ice cubes and shake well.
- Put 2 tablespoons tender coconut into each serving glass, strain ¼ portion of lemon juice mixture into each glass and top it up with tender coconut water. Garnish with rosemary sprigs and serve chilled.
