Chicken Tikka Bao

This snack takes very little time to assemble. Take readymade chicken tikka and baos. Further cook the tikkas in makhni gravy, stuff this in the baos and serve. An excellent snack to serve with cups of hot tea or to children when they come home hungry from the school.

Ingredients

  • 250 grams ready-made chicken tikka, cut into ½ inch pieces
  • 4 ready-made baos
  • 1 tablespoon + 4 teaspoons butter
  • 1 teaspoon oil
  • 1 teaspoon red chilli powder
  • ½ teaspoon garam masala powder
  • ½ tablespoon ginger-garlic paste
  • 1 cup tomato puree
  • Salt to taste
  • ¼ teaspoon dried fenugreek leaves (kasuri methi) powder
  • 1-2 teaspoons honey
  • 1-2 tablespoons fresh cream
  • Shredded cabbage as required
  • Mayonnaise for drizzling
  • Spring onion greens slices for garnish

Method 

  1. Heat 1 tablespoon butter and oil in a pan. Add red chilli powder, garam masala powder and ginger-garlic paste, mix and sauté for 30 seconds.
  2. Add tomato puree, mix well and saute for 3-4 minutes. Add salt, mix and saute for 1-2 minutes. 
  3. Add chicken tikka and mix well. Add dried fenugreek leaves powder and honey and mix. Add fresh cream and mix well. Take the pan off the heat.
  4. Heat remaining butter in a non-stick pan till it melts. Place the baos in it and toast till golden on both sides.
  5. Stuff each bao with some cabbage, place a portion of the chicken mixture. Drizzle mayonnaise and garnish with spring onion greens. Place them in serving plates and serve.
