Ingredients
- ¾ cup Pro V Select Afghan Whole Natural Black Raisins
- ½ cup castor sugar
- ½ cup fresh cream
- ½ cup chopped white chocolate
- 1 cup whipping cream
- ¼ cup condensed milk
- Fresh mint sprigs for garnish
Method
- Heat 2 cups water in a non-stick pan, add Pro V Select Afghan Whole Natural Black Raisins and cook till the mixture comes to a boil. Add sugar and cook for 10-12 minutes on medium heat. Take the pan off the heat and allow to cool.
- Heat fresh cream in another non-stick pan, add white chocolate and cook, stirring, till chocolate melts. Take the pan off the heat and allow to cool.
- Take whipping cream in a bowl and beat till soft peaks are formed.
- Add condensed milk and continue to beat.
- Add white chocolate mixture and mix with light hands.
- Reserve some raisin mixture and add the remaining mixture to the above mixture and mix well.
- Transfer into an airtight container, spread remaining raisin mixture on top, cover the container and freeze for 8-10 hours.
- Put scoops in serving bowls and serve chilled.
