Ingredients

  • 100 grams arugula leaves
  • 1 red apple
  • 1 green apple
  • 1 English cucumber
  • 1½ teaspoons mustard paste
  • 1 lemon
  • 1½ tablespoons honey
  • 4 tablespoons extra virgin olive oil
  • Crushed black peppercorns to taste
  • Salt to taste
  • Pro V Lite Activated Pecan Nuts as required
  • Pro V Regal Jumbo Cranberries as required

Method

  1. Quarter red and green apples, remove the core and slice.
  2. Halve English cucumber vertically and slice.
  3. Take ice cold water in a bowl, add arugula leaves and set aside for 10-15 minutes. Transfer in a salad rinser and drain excess water.
  4. Take mustard paste in a glass jar, squeeze the juice of lemon into it, add honey, extra virgin olive oil, crushed black peppercorns and salt. Close the lid and shake well.
  5. Take cucumber in a bowl, add green apple and red apple. Reserve some dressing and drizzle the remaining dressing over the apples and mix well.
  6. Arrange some arugula leaves on a serving plate and top it with some apple mixture. Sprinkle some Pro V Lite Activated Pecan Nuts and some Pro V Regal Jumbo Cranberries on top.
  7. Arrange remaining arugula leaves and remaining apple mixture on top. Sprinkle some more Pro V Lite Activated Pecan Nuts and Pro V Regal Jumbo Cranberries on top.
  8. Drizzle remaining dressing and serve.
