Ingredients for Zucchini Pine nut Dip Recipe

  • Green zucchini cut into small pieces 1 medium

  • Pine nuts(chilgoza) ½ cup

  • Olive oil 1 tablespoon

  • Garlic chopped 1 tablespoon

  • Onion finely chopped 1 medium

  • Salt to taste

  • Crushed black peppercorns to taste


Step 1

Heat olive oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add onion and sauté till translucent.

Step 2

Add zucchini, mix and cook for 2 minutes. Add pine nuts, salt and crushed peppercorns, mix and cook for 1-2 minutes. Remove from heat and cool.

Step 3

Grind the cooked zucchini mixture along with some water to make a smooth mixture.

Step 4

Transfer in a bowl, sprinkle some crushed peppercorns on top and serve.
