Ingredients list for Zucchini Pine nut Dip

  • 1 medium Green zucchini cut into small pieces
  • ½ cup Pine nuts(chilgoza)
  • 1 tablespoon Olive oil
  • 1 tablespoon Garlic chopped
  • 1 medium Onion finely chopped
  • to taste Salt
  • to taste Crushed black peppercorns


  1. Heat olive oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add onion and sauté till translucent.
  2. Add zucchini, mix and cook for 2 minutes. Add pine nuts, salt and crushed peppercorns, mix and cook for 1-2 minutes. Remove from heat and cool.
  3. Grind the cooked zucchini mixture along with some water to make a smooth mixture.
  4. Transfer in a bowl, sprinkle some crushed peppercorns on top and serve.
