Ingredients list for Vietnamese Prawns

  • 1 cup Prawns shelled and deveined
  • to taste Salt
  • 1/2 teaspoon Sugar
  • 1 1/2 tablespoons Rice flour
  • 1/2 Egg white
  • 8 Sugarcane peeled and cut into 4-inch sticks
  • 1/4 cup White and black sesame seeds
  • for grilling Oil
  • to garnish Fresh coriander sprig
  • For Sauce
  • 3 Garlic cloves
  • 3 Red bird’s eye chillies
  • 2 tablespoons Fish sauce
  • 1 1/2 teaspoons Brown sugar
  • 1 Lemon juice extracted


  1. Put prawns, salt, sugar, rice flour and egg white in a blender jar and blend to a fine paste.
  2. Dampen your palms with water, take a portion of prawn mixture and wrap it tightly around a sugarcane stick. Use up the rest of the prawn mixture similarly.
  3. Spread sesame seeds on a plate. Coat some of the prepared prawn sticks in the sesame seeds and leave the remaining as it is.
  4. Heat oil on an induction grill. Place the prawn sticks and grill, rotating the sticks, till they are cooked and grill marks appear all around.
  5. To make sauce, finely chop garlic cloves and bird’s eye chillies and put both into a bowl. Add fish sauce and brown sugar and mix well. Squeeze the juice of ½ lemon into the bowl and mix well.
  6. Arrange the grilled prawn sticks on a serving platter, garnish with coriander sprig and serve immediately with the sauce.
