The food of the northern Vietnam is heavily influenced by China with its stir-fries and noodle-based soups. As you proceed south, there is more flavour, akin to Thailand and Cambodia. The tropical climate down south also sustains more rice paddies, coconut groves, jackfruit trees, and herb gardens. The food in southern Vietnam is typically sweeter. French colonization – from 18th century to 1954 - had its influence on Vietnamese food. It definitely left a lasting effect on the country and its people.

Ingredients for Vietnamese Prawns Recipe

  • Prawns shelled and deveined 1 cup

  • Salt to taste

  • Sugar 1/2 teaspoon

  • Rice flour 1 1/2 tablespoons

  • Egg white 1/2

  • Sugarcane peeled and cut into 4-inch sticks 8

  • White and black sesame seeds 1/4 cup

  • Oil for grilling

  • Fresh coriander sprig to garnish

  • For Sauce

  • Garlic cloves 3

  • Red bird’s eye chillies 3

  • Fish sauce 2 tablespoons

  • Brown sugar 1 1/2 teaspoons

  • Lemon juice extracted 1

Method

Step 1

Put prawns, salt, sugar, rice flour and egg white in a blender jar and blend to a fine paste.

Step 2

Dampen your palms with water, take a portion of prawn mixture and wrap it tightly around a sugarcane stick. Use up the rest of the prawn mixture similarly.

Step 3

Spread sesame seeds on a plate. Coat some of the prepared prawn sticks in the sesame seeds and leave the remaining as it is.

Step 4

Heat oil on an induction grill. Place the prawn sticks and grill, rotating the sticks, till they are cooked and grill marks appear all around.

Step 5

To make sauce, finely chop garlic cloves and bird’s eye chillies and put both into a bowl. Add fish sauce and brown sugar and mix well. Squeeze the juice of ½ lemon into the bowl and mix well.

Step 6

Arrange the grilled prawn sticks on a serving platter, garnish with coriander sprig and serve immediately with the sauce.
