With the recognition of being an important commercial pulse of the world, soya beans are coming into many kitchens around the world. Soya beans are said to control blood sugar levels, lower cholesterol, regulate the bowels and relieve constipation. Besides the popular tofu or beancurd, the beans are also fermented and used to make flavouring pastes and condiments, notably the Japanese soy sauce or shoyu and miso and the Indonesian tempeh.

Ingredients for Veg Peshawari Kababs Recipe

  • soya mince soaked for 1 hour 1 cup

  • Carrot thickly grated 1 cup

  • Green capsicum finely chopped 1 medium

  • Onions finely chopped 2 medium

  • Ginger-garlic paste 3 teaspoons

  • Salt to taste

  • Red chilli powder 1/4 teaspoon

  • Garam masala powder 1/4 teaspoon

  • Hung yogurt 2 tablespoons

  • Cornflour/ corn starch 4 tablespoons

  • Chole masala 2 teaspoons

  • Bread crumbs 1/2 cup

  • Oil to shallow fry

Method

Step 1

Squeeze out the water from the soya mince and place in a bowl.

Step 2

Add carrot, capsicum, onions, ginger-garlic paste, salt, red chilli powder, garam masala powder, hung yogurt, cornflour, chole masala and breadcrumbs and mix well.

Step 3

Divide the mixture into eight equal portions and shape them into kababs.

Step 4

Heat oil in a shallow non-stick pan and place the prepared kababs.

Step 5

Cook on medium heat, turning sides, till both the sides are equally golden brown and crisp.

Step 6

Drain on absorbent paper and serve hot.
