Ingredients list for Varo

  • 1 tablespoon Ghee
  • 1 cup Sugar
  • 1 medium Dried coconut ( khopra) sliced
  • 2 tablespoons Poppy seeds (khuskhus/posto)
  • ½ teaspoon Green cardamom powder
  • 1 cup Mixed nuts (almonds, pistachios, cashewnuts), sliced

Method

  1. Heat ghee in a non-stick pan. Add sugar and cook till it caramelizes and turns a light brown.
  2. Add nuts, coconut, poppy seeds and cardamom powder, mix well till the nuts are coated well with the caramelised sugar. Pour this mixture on the back of a thali.
  3. Using the flat side of a katori, flatten the mixture into a thick chapatti. This has to be done very quickly as the mixture begins to harden as soon as it is removed from heat.Set aside for some time to set.
  4. Break into pieces and serve or store in an airtight container.
