Vanilla Cake Sponge

This is the basic recipe to make a sponge cake which then can be used to make a number of desserts. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Vanilla Cake Sponge

  • for dusting Refined flour (maida) 1 cup +
  • 1 teaspoon Vanilla essence
  • for greasing Butter softened, 1 cup +
  • 1 cup Castor sugar (caster sugar)
  • 3 Eggs
  • 1 teaspoon Baking powder
  • as required Milk

Method

  1. Preheat oven to180ºC. Grease a baking tin with some butter and dust with some flour.
  2. Cream together butter and sugar in a bowl with an electric beater till smooth.
  3. Add vanilla essence and eggs, one by one, beat well.
  4. Sieve flour into the mixture. Add baking powder and fold in till well combined. Add milk and mix well into a smooth batter.
  5. Pour the batter into the prepared tin, level it and tap. Place the tin in the preheated oven and bake for 35-40 minutes. Remove from heat and cool down to room temperature.
  6. Serve or use as required.
