Ingredients
- 4 medium cucmbers
- 3 tbsps chopped fresh mint + 1 sprig to garnish
- 1 garlic clove, crushed
- 1 teaspoon castor sugar (caster sugar)
- 1 cup yogurt, drained and whisked
- Salt to taste
- 1/2 teaspoon paprika
Method
- Peel the cucumber and cut in half lengthways. Remove the seeds and slice as thinly as possible. Combine the chopped mint, garlic, caster sugar and yogurt in a bowl. Mix the cucumbers with the yogurt.
- Add salt to taste. Serve chilled, garnished with a sprinkling of paprika and the sprig of mint.
