Turai Moong Dal

Ingredients 

  • 500 grams ridge gourd (turai), scraped and roughly chopped
  • 1/2 cup split skinless green gram ,(dhuli moong dal) soaked for 30 minutes and drained
  • 2 tablespoons ghee
  • 1 inch ginger, grated
  • Salt to taste
  • 2 medium toamtoes, chopped
  • Fresh coriander sprigs for garnish

Method

  1. Heat ghee in a non-stick pan, add ginger and sauté for a few seconds.
  2. Add ridge gourd and sauté well. Add salt, mix well, cover and cook for 2-3 minutes.
  3. Add  tomatoes and green gram, mix well, cover and cook for 20-25 minutes. Adjust salt, if required.
  4. Garnish with coriander sprigs and serve hot.
