Ingredients list for Tricolour Penne with Fresh Mozzarella
- 2 cups Tricolour Penne Pasta boiled
- 150 grams Fresh Mozzarella Cheese
- 2 tablespoons Extra virgin olive oil
- 2-3 Garlic cloves
- 16-18 Cherry tomatoes
- to taste Salt
- to taste Crushed black peppercorns
- 1 teaspoon Red chilli flakes
- 8-10 Fresh basil leaves
Method
- Heat extra virgin olive oil in a non-stick pan. Crush garlic cloves and add to the pan and sauté for half a minute.
- Halve cherry tomatoes and add to the pan and mix well. Add salt, crushed peppercorns and cook till tomatoes are soft.
- Add tricolor penne and red chilli flakes and mix well.
- Roughly tear basil leaves and add. Add half the mozzarella cheese and mix well. Cook for a few minutes.
- Transfer the pasta onto a serving plate, garnish with the remaining mozzarella cheese and serve immediately.
