Ingredients
- 4 tortillas
- Olive oil to brush
- 6 tablespoons pizza sauce
- 1 large yellow capsicum, cut into thin strips
- 1 large red capsicum cut into thin strips
- 1 large green capsicu,m cut into thin strips
- 2 medium onions, quartered and layers separated
- 6-8 button mushrooms sliced
- 6-8 cherry tomatoes sliced
- 4-6 green olives pitted and sliced
- 5-6 black olives pitted and sliced
- 16-20 fresh basil leaves
- ½ cup American corn kernels boiled
- Salt to taste
- Crushed black peppercorns to taste
- Processed cheese grated, as required
- Red chilli flakes to sprinkle
Method
- Preheat oven to 180° C.
- For one portion, place 1 tortilla on a baking tray and apply olive oil on it. Spread 1½ tbsps pizza sauce on it.
- Place some coloured capsicum strips, onions, mushrooms, cherry tomato, green olives, black olives, basil and corn on the tortilla.
- Sprinkle salt and crushed black peppercorns on it. Grate cheese on top, keep the tray in the preheated oven and bake for 10 minutes. Make more pizzas similarly.
- Cut into wedges, sprinkle red chilli flakes and serve hot.
